
@April 's garlic confit recommendation reminded me of this Cherry Tomato Confit with Garlic and Shallots recipe that I make at least once a week for as long as our tomato plants are tomato-ing. It's so pretty. Serve it with crostini as an appetizer, fancy up some burrata, use any leftovers for pasta, and don't waste a bit of the oil.
